Cava Maciel: A Celestial Journey Through Baja’s Wine Country
I first met Jorge Maciel back in 2019 when my cousin and I went down to wine country. We all hit it off immediately and he was kind enough to give us a tour of the facility along with the private tasting. Now I always seek out his winery when I’m down in Baja. He has a couple of units on the property that’s a great place to stay. And when he’s up and Phoenix or Sedona doing a tasting event, I always make it a point of coming to see him. Recently I had the opportunity to pour some Mexican wines at a tasting, and I was able to include his lusciously rich Nebbiolo in the flight.
The Journey of Cava Maciel
Nestled in the picturesque Valle de Guadalupe, Baja California’s premier wine region, Cava Maciel stands as a testament to one man’s passion and dedication to the art of winemaking. Founded in 2009 by Jorge Maciel, this boutique winery has quickly become a must-visit destination for wine enthusiasts and casual tourists alike.

Jorge Maciel, born in Ensenada in 1970, embarked on his winemaking journey over two decades ago. His love affair with wine began in his 20s, and by the year 2000, he was already crafting his own wines. This experience and dedication shine through in every bottle produced at Cava Maciel.
The Winery Experience
Visiting Cava Maciel is an adventure in itself. The journey takes you through wide dirt roads, old oak groves, and rolling hills, offering a unique perspective of the Guadalupe Valley. As you approach the winery, you’re greeted by stone-lined entrances and a small greenhouse that grows fresh vegetables for their salsas.

The winery’s design is a harmonious blend of modern architecture and natural elements. The buildings take advantage of the area’s natural rock formations, creating a stunning visual impact. The tasting room, perched atop a hill, offers breathtaking views of the surrounding landscape.

The Winemaking Process
Jorge Maciel’s approach to winemaking is both scientific and artistic. During my visit, I had the privilege of witnessing the grape harvesting process. The care and precision with which the grapes are handled is impressive. Jorge explained that the grapes are cooled for a period to allow flavors and aromas to develop before fermentation begins.

This attention to detail is evident in every step of the winemaking process. Jorge’s style is unique, and he’s not afraid to experiment with different techniques to achieve the perfect balance in his wines.

Valle de Ojos Negros (2,400 ft elevation): Syrah, Tempranillo
Valle de San Vicente: Chardonnay, Merlot, Cabernet Sauvignon, Nebbiolo
By carefully selecting grapes from these diverse regions, Jorge is able to create wines that truly represent the best of Baja California’s terroir.

Jorge Maciel’s passion for sharing his wines extends beyond Valle de Guadalupe. He frequently participates in wine tasting events in cities like Phoenix and Sedona, offering wine enthusiasts outside of Baja California the opportunity to experience Cava Maciel’s offerings.
